3 tbsp. canola oil
1 medium white onion, thinly sliced
3 cloves garlic, finely chopped
3 poblano chiles, roasted, peeled, stemmed, seeded, and thinly sliced
4 sprigs epazote (available at melissas.com) or cilantro, roughly chopped
Kosher salt, to taste
Heat oil in a 12" skillet over medium-high heat. Add onion, and cook, stirring, until slightly caramelized, about 12 minutes. Add garlic and chiles, and cook, stirring, until heated through, 2 minutes. Add potatoes, and cook, stirring, until potatoes are very tender, about 10 minutes. Remove from heat and stir in epazote; season with salt.

Salsa de Albañil (Tomatillo Salsa with Avocado and Queso Fresco)

Ingredients

8 oz. tomatillos, husks removed, rinsed (available at melissas.com)
⅓ cup plus 2 tbsp. roughly chopped cilantro
¼ cup minced white onion
2 serrano chiles, stemmed, seeded, and finely chopped
1 clove garlic, minced
Kosher salt, to taste
4 oz. queso fresco, cut into twelve ¼" slices (available at mexgrocer.com)
1 avocado, halved, pitted, peeled and cut into 12 slices
Warm tortillas, for serving

Instructions

Bring tomatillos and 4 cups water to a boil in a 4-qt. saucepan; cook until tomatillos are just soft, about 5 minutes. Drain and set aside to cool.
Place tomatillos, ⅓ cup cilantro, 2 tbsp. onion, chiles, garlic, and salt in a blender or food processor, and pulse until slightly chunky, about 20 pulses. Pour salsa into a serving dish and alternately layer queso fresco and avocado over salsa; sprinkle with remaining cilantro and onion. Serve with tortillas.

Salsa-Simmered Tortillas (Chilaquiles)

Ingredients

6 plum tomatoes, cored
2 cloves garlic, unpeeled
1 jalapeño, stemmed, halved lengthwise, and seeded
1 small white onion, quartered
2 tbsp. vegetable oil, plus more for frying
4 canned chipotle chiles en adobo
4 tbsp. roughly chopped cilantro
1 1⁄2 tbsp. sesame seeds, toasted
1⁄4 tsp. dried oregano
10 6" corn tortillas stacked and cut into 1 1⁄2" squares
Kosher salt, to taste
6 oz. fresh chorizo, removed from casing and chopped into chunks
1⁄4 cup sour cream, to garnish
2 oz. cotija or feta cheese, crumbled, for garnish
4 radishes, thinly sliced

Instructions

Heat oven to broil and place rack 6" from heating element. In a medium bowl, toss tomatoes, garlic, jalapeño, and onions with 2 tbsp. vegetable oil. Transfer ingredients to a foil-lined 9" x 13" baking pan and broil, turning occasionally as tomato skins start to blister and blacken, about 10 minutes. Transfer roasted vegetables to a food processor. Add chipotle chiles, 2 tbsp. cilantro, sesame seeds, oregano, and 1⁄4 cup water to the food processor and purée until smooth, about 1 minute. Set sauce aside.
Pour vegetable oil into a deep 12" cast-iron skillet until it reaches a depth of 1"; heat over medium-high heat until a deep-fry thermometer registers 350°. Working in 2 batches, add tortillas and fry, stirring occasionally, until golden brown and crisp, about 3 minutes per batch. Using a slotted spoon, transfer tortilla chips to a paper towel-lined baking sheet. Lightly season them with salt. Repeat with remaining tortillas. Set aside.
Heat a deep 12" nonstick skillet over medium-high heat. Add chorizo and cook, stirring frequently and breaking meat up into small pieces with a wooden spoon until browned and cooked through, 8–10 minutes. Add tomato-chipotle sauce to skillet, stir to combine, and season with salt. Bring to a simmer, add tortilla chips, and stir to combine. Let ingredients simmer until the tortilla chips just soften, about 2 minutes.
Transfer chilaquiles to a platter and garnish with remaining cilantro, sour cream, cheese, and radishes.

¼ small white onion, thinly sliced
½ cup cilantro leaves
1 avocado, halved, pitted, and peeled
Kosher salt, to taste

Instructions

Place tomatillos, chiles, garlic, and onion in blender, and pulse until vegetables break down and mixture is still slightly chunky. Add cilantro, avocado, and salt and continue to pulse until salsa is blended and creamy but still has some texture. Pour into a serving bowl, and refrigerate until ready to use.
Hash Brown Casserole

Ingredients

Frozen hash browns
1 small onion, chopped
1 green bell pepper, chopped
olive oil
16 strips of crisp bacon, clumbled
14 eggs
2 cups grated cheddar cheese
Sour cream
Scallions, chopped (as garnish)

Directions

7 X 11 baking dish
Preheat oven to 325°.
Spray baking dish and fill it over half-full of frozen hash browns. Brown one small onion and pepper in a small amount of olive oil and spread over potato mixture. Follow with bacon. Place in the oven for 30 minutes (watch so that it doesn't over-brown the bacon and the potatoes are done). Twenty minutes before serving, scramble the eggs until soft and spread over the potato mixture. Cover with cheese and return to barely warm oven to melt the cheese. Top each serving portion with a small scoop of sour cream and scallions.

Ingredients

5 egg whites (room temperature)
1/4 teaspoon Cream of Tartar
4 egg yolks (room temperature)
1/4 cup of water
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/2 pound of deli ham, shaved and torn
1 cup shredded sharp cheddar cheese

Directions

Preheat oven to 375 degrees. Make sure oven is hot. In 9-inch non-stick skillet, heat one tablespoon butter. In mixing bowl, beat egg whites until frothy; add cream of tartar and beat until almost stiff. In second mixing bowl, beat egg yolks with water, salt, and pepper until thick and lemon-colored. Fold egg yolks into egg whites gently. Put mixture into skillet and cook on medium-high for one minute. Bottom of omelet will set and begin to rise. Put skillet in center of oven for 10 to 12 minutes until lightly brown. While omelet is cooking, warm ham and cheese mixture in microwave for 1-1/2 minutes. When omelet is done, remove from oven carefully. Put filling on one half of omelet. Fold other half over top of filling, cutting the back with a sharp knife so omelet won't break.

I
am a big fan of the breakfast foods I found in the Philippines. All
Pinoy breakfasts are served with rice, an interesting meat, and an over
easy egg. Some of the fancy places also give you a little pile of
shredded and pickled vegetables.

This
is a fish ubiquitous in many of my meals, called the Bangus. I think
the English name for it is milk fish. They serve it whole, like you see
above but I had many meals where they serve only the belly. It is a
pretty good and obviously versatile white fish.

Pork
adobo is not generally an item seen on breakfast menus but here it is
served in the traditional breakfast platter. It is ostensibly pork slow
cooked in soy sauce and vinegar, recipes vary and can include coconut
milk, different meats, etc.

I
ate this in the Chinese part of town but the Philippines is the only
place I have ever been served congee with a raw egg dropped into it. My
brother loves it this way and when he orders congee at a restaurant here
in San Francisco, he will always ask for an uncooked egg and drop it in
himself.

Sago
and gulaman drink is an anytime drink that consists of sugared water,
jelly and tapioca. I find the stuff you get at restaurants is much too
sweet. These people are sitting duck for the diabeetus. I had to pour
tons of ice water into it to temper the overwhelming sweetness.

Ooooooooo! Longasino are sweet, Filipino sausages.

I
really liked the Tocino, a preserved, sweet pork that is grilled before
serving. The only problem is that I had diarrhea every time I ate it.
Granted, it did not stop me from eating it more than once as it was
delicious but the stomach problems were annoying.

At a fancy hotel in Baguio with my Uncle, I opted for a Western breakfast.

The
fruit was okay but this cold oatmeal was gross. My lesson for the day
was to avoid Western food in the Philippines. In my defense, this hotel
is the former Camp John Haye and US military camp up until WWII.

More longasina, this time with the traditional vinegar dip often accompanying this type of sausage.

More
Tocino... I was eating a lot of it despite the diarrhea it was causing.
Some versions were more tasty than others but all caused the loose
