Let us reconsider breakfast, choosing easy to prepare foods or meals that can be prepared ahead and then microwaved quickly at the last minute.<br /><br />Here are some breakfast ideas to get you started.<br /><br />1. Teens tell me that their hands down favorite breakfast is cold leftover pizza. You can plan leftovers the same way you plan the meal.<br /><br />2. Try yogurt and fruit, or yogurt and granola. You can even get a kids yogurt that doesn't require a spoon- eat on the go.<br /><br />3. A breakfast smoothie or protein shake is portable and quick. Blend, pour, rinse the blender, and take it with you. Set up the ingredients the night before to make it quick.<br /><br />4. My families favorite is either breakfast burritos, ham and cheese croissants or sausage biscuits that I make ahead and store in the freezer. 30 seconds each in the microwave and we are out the door.<br /><br />5. Make a sandwich. We like either peanut butter and banana or pimento cheese, both of which are easy to make quickly and take with you.<br /><br />6. Grab a granola bar and a piece of fruit. Read the label, though. Many of the granola bars are not as healthy as you might think.<br /><br />7. If you have a little time in the morning, make your own breakfast bowl. 150 gm castor sugar<br />
4 eggs<br />
2 cups flour<br />
1 tsp baking powder<br />
1 cup nuts (toasted walnuts, almonds and cashew nut)<br />
1 cup oats<br />

Method<br />
<br />
In a bowl add butter, sugar and beat together.<br />
Beat in the eggs slowly, one by one.<br />
Beat is very lightly.<br />
Now fold in the flour. Mix well.<br />
Add baking powder. Mix.<br />
Now add the nuts. If you do not like nuts you can use dries fruits like raisins, cranberries or even choco chips)<br />
Add the oats and mix well.<br />
Pre-heat the oven at 180 degrees.<br />
Line the muffin tin with butter paper and spoon in the batter.<br />
Sprinkle some oatmeal on top.<br />
Bake for about 20 minutes.<br />

Preheat the oven to 325 degrees F.<br />
Mix the juice into the oats. Then add all other ingredients and spread them evenly onto a baking tray.<br />
Bake for 45 minutes and keep turning the mixture frequently.<br />
Remove from the oven and leave until cool.<br />
Add the hung yoghurt, almonds and fresh fruits.<br />
If you feel indulgent, you can add a teaspoon of honey.<br />
Serve.<br />

Peel and cut the potatoes and rub them with some salt.<br />
In a pan add 4-5 tbsp oil and toss the potatoes till cooked.<br />
In a bowl break the eggs and whisk them till fluffy. Add chopped corriander leaves.<br />
Add 2-3 Tbsp sauteed onions, green chillies, black pepper and some salt and small bits of cheese slices. Whisk. Mix in the cooked potatoes.<br />
In a saucepan add a Tbsp of oil and pour the batter. Cook for a minute. Cover it with a lid and cook for another 2-4 minutes. Flip and cook from the other side.<br />

3 tbsp. canola oil<br />
1 medium white onion, thinly sliced<br />
3 cloves garlic, finely chopped<br />
3 poblano chiles, roasted, peeled, stemmed, seeded, and thinly sliced<br />
4 sprigs epazote (available at melissas.com) or cilantro, roughly chopped<br />
Kosher salt, to taste<br />

Place potatoes in a 4-qt. saucepan and cover with water by 1"; bring to a boil over high heat, and cook until just tender, about 20 minutes. Drain, and set aside.<br />
Heat oil in a 12" skillet over medium-high heat. Add onion, and cook, stirring, until slightly caramelized, about 12 minutes. Add garlic and chiles, and cook, stirring, until heated through, 2 minutes. Add potatoes, and cook, stirring, until potatoes are very tender, about 10 minutes. ⅓ cup plus 2 tbsp. roughly chopped cilantro<br />
¼ cup minced white onion<br />
2 serrano chiles, stemmed, seeded, and finely chopped<br />
1 clove garlic, minced<br />
Kosher salt, to taste<br />
4 oz. queso fresco, cut into twelve ¼" slices (available at mexgrocer.com)<br />
1 avocado, halved, pitted, peeled and cut into 12 slices<br />
Warm tortillas, for serving<br />

Bring tomatillos and 4 cups water to a boil in a 4-qt. saucepan; cook until tomatillos are just soft, about 5 minutes. Drain and set aside to cool.<br />
Place tomatillos, ⅓ cup cilantro, 2 tbsp. onion, chiles, garlic, and salt in a blender or food processor, and pulse until slightly chunky, about 20 pulses. Pour salsa into a serving dish and alternately layer queso fresco and avocado over salsa; sprinkle with remaining cilantro and onion. Serve with tortillas.<br />

2 tbsp. vegetable oil, plus more for frying<br />
4 canned chipotle chiles en adobo<br />
4 tbsp. roughly chopped cilantro<br />
1 1⁄2 tbsp. sesame seeds, toasted<br />
1⁄4 tsp. dried oregano<br />
10 6" corn tortillas stacked and cut into 1 1⁄2" squares<br />
Kosher salt, to taste<br />
6 oz. fresh chorizo, removed from casing and chopped into chunks<br />
1⁄4 cup sour cream, to garnish<br />
2 oz. cotija or feta cheese, crumbled, for garnish<br />

Heat oven to broil and place rack 6" from heating element. In a medium bowl, toss tomatoes, garlic, jalapeño, and onions with 2 tbsp. vegetable oil. Transfer ingredients to a foil-lined 9" x 13" baking pan and broil, turning occasionally as tomato skins start to blister and blacken, about 10 minutes. Transfer roasted vegetables to a food processor. Add chipotle chiles, 2 tbsp. cilantro, sesame seeds, oregano, and 1⁄4 cup water to the food processor and purée until smooth, about 1 minute. Set sauce aside.<br />
Pour vegetable oil into a deep 12" cast-iron skillet until it reaches a depth of 1"; heat over medium-high heat until a deep-fry thermometer registers 350°. Working in 2 batches, add tortillas and fry, stirring occasionally, until golden brown and crisp, about 3 minutes per batch. Using a slotted spoon, transfer tortilla chips to a paper towel-lined baking sheet. Lightly season them with salt. Repeat with remaining tortillas. Set aside.<br />
Heat a deep 12" nonstick skillet over medium-high heat. Add chorizo and cook, stirring frequently and breaking meat up into small pieces with a wooden spoon until browned and cooked through, 8–10 minutes. Add tomato-chipotle sauce to skillet, stir to combine, and season with salt. Bring to a simmer, add tortilla chips, and stir to combine. Let ingredients simmer until the tortilla chips just soften, about 2 minutes.<br />
Transfer chilaquiles to a platter and garnish with remaining cilantro, sour cream, cheese, and radishes. <br />
